WHFoods Menu: Greek Broccoli with Feta Cheese and Kalamata Olives
Olives and feta cheese add a Greek twist to this easy-to-prepare, nutrient-rich veggie dish. Finely chopping broccoli is essential for adding great flavor and optimum nutrition to this recipe.

Prep and Cook Time: 10 minutes

Ingredients:

  • 1-1/2 cups broccoli, finely chopped
  • 1/2 medium red onion, sliced thin
  • 3/4 TBS feta cheese
  • 2 Kalamata olives, chopped
  • 1 TBS extra virgin olive oil
  • 2-3 tsp lemon juice
  • 1 small clover garlic, chopped or pressed
  • Sea salt and pepper to taste

Directions:

Fill the bottom of the steamer with 2 inches water and heat, covered.

Method 1: Hand chop

  1. Thinly slice red onion. Chop or press garlic.
  2. Separate broccoli florets with small stems from large, thick stem. Finely chop florets and small stems into 1/4-inch, even pieces.
  3. Let vegetables sit 5 minutes before steaming.
  4. Layer the vegetables in the steamer with onions on the bottom and topped with chopped broccoli.
  5. Cover with tight-fitting lid and steam for 5 minutes, until bright green. (After 5 minutes, vegetables begin to lose their bright green color, and are over-cooked.) If you prefer a more mellow taste to your garlic add it to the vegetables during the last minute of cooking.
  6. Transfer to a bowl and toss with remaining ingredients.

    Method 2: Food processor

  7. You will need a food processor with at least an 8 cup capacity. Use the s-blade.
  8. Thinly slice onion and set aside. Do not food process the onion.
  9. Chop or press garlic.
  10. Separate broccoli florets with small stems from large, thick stem. Chop florets and stems into even 1 inch pieces. Tightly pack to measure 1-1/2 cups.
  11. Let vegetables sit for 5 minutes before steaming.
  12. Place broccoli in food processor and pulse 6-8 times, until everything is evenly chopped into small pieces (about 1/4-inch). Remove any large pieces and process again. Be careful not to over-process the broccoli, as it will become mushy when cooked.
  13. Place sliced onion in the bottom of the steamer and top with broccoli. Cover with tight-fitting lid and steam for 5 minutes, until bright green. (After 5 minutes, vegetables begin to lose their bright green color, and are over-cooked.) If you prefer a more mellow taste to your garlic you can add it to the cooking vegetables during the last minute of cooking.
  14. Transfer to a bowl and toss with remaining ingredients.

Note: If you wish to use the large broccoli stem, cut off the bottom 1 inch of the stem. Peel the tough skin off the stem. Chop stem into 1/4-inch pieces and steam along with rest of broccoli.

Research shows that fat-soluble vitamins and carotenoids found in foods, such as Broccoli, may be better absorbed when consumed with fatcontaining foods like extra virgin olive oil. Dressing helps tenderize Broccoli. 5-10 minutes after it is dressed you will find it will have become more tender.
